Päivi’s sausage soup is a light delicious Finnish style sausage soup that can be prepared and served throughout the year.
Makes approximately 6 portions
Ingredients
– 1,0-1,5 l water
– 500g crushed tomatoes
– 200g parsnips
– 200g carrots
– 200g swede
– 6-7 medium sized potatoes
– 500g of Sausages Finland’s sausage or Quick ‘n Easy sausage meat
– 1 bunch of fresh parsley
– herb salt
Instructions
Measure the water into a saucepan and bring to the boil
Cut the peeled root vegetables and add to the boiling water
Allow the root vegetables to cook for a short time then add the potatoes
Once the root vegetables and potatoes are cooked to your liking mix in the the crushed tomatoes
Remove the sausage from the skin and add chunks of sausage to the mixture and cook for a few minutes
Check the taste and add herb salt or salt if required.
Sprinkle with fresh parsley and serve
