A South African Favourite – Melktert or Milk Tart

Melktert or Milk Tart is a popular South African dessert. This dessert stem from the Dutch settlers who arrived at the Cape of Good Hope in 1652.

Many recipes can be found on the Internet. We have tried many and this is our favourite and relatively simple to make. We have been using the recipe for over 35 years.

This recipe does not require any baking!!

Take one packet of Marie biscuits and crush the biscuits. Marie biscuits can be found in most Finnish supermarkets. We normally buy from Lidl as we think they are the best.

Gently melt 125g of butter in a dish.
Pour the butter over the Marie biscuit crumbs and mix gently together.
Press the mix into a pie dish to form the base and sides of the tart.
Place the dish into the refrigerator and allow to set.

Next make the filling.
Ingredients:-
2 and a quarter cups of milk
1 and a half tablespoons of Maizena
1 and a quarter tablespoons of flour
half a cup of sugar
2 eggs
Half a teaspoon of vanilla essence
1 dessertspoon of butter
Cinnamon to sprinkle on top of the tart
Pinch of salt

Method:-
1) Beat the eggs well.
2) Add the sugar, flour, maizena and salt to the eggs and mix together well
3) Boil the milk and remove the milk from the hot plate.
4) Slowly add the mixture to the milk stirring all the time until it starts to thicken. If the mixture does not thicken, place the mixture back on the hot plate and stir until it starts to thicken. Do not make the mixture too thick because it will thicken more as it cools.
5) Finally add the butter and vanilla to the mix and stir it in.
6) Pour the mixture into the crust.
7) Sprinkle the cinnamon over the top of the tart.
8) Place into the refrigerator to set.

The pie crust can also be made using a short crust pastry.
